Speck is a type of cured, lightly smoked ham. It's typically made in South Tyrol, a province in northeast Italy known for its snow-capped Dolomite mountains and strong German-Austrian influence. Although a close cousin to prosciutto crudo, speck is worthy of its own distinction when it comes to cured hams.
The company "Dolcevalle S.A.S. Prosciutti ", owned by the members of Limonta family, was founded in 1975. The production facility is located in Langhirano, near the Castello di Torrechiara, in the heart of the typical area of Prosciutto di Parma. From the date of foundation the company is associated with Consorzio del Prosciutto di Parma.
