This is bellota Iberico 100%. Paleta is the second most sought cut from an Iberico pig, after the ham. The paleta is the cured shoulder (front leg) from the iberico pig that is put in salt and then cured for up to 36 months. While the shoulder tend to be a harder working muscle than the ham (hence the price difference), the taste is still fantastic and nothing like any other cured ham in the world. Slicing it is an art that very few master and that takes years of practice. The slicing is done by hand, very thinly for the meat to almost disappear in your mouth, leaving its typical nutty flavor. The slices are carved by hand with a knife, not by machine.
