Coq au Vin is a preparation poultry meat (Hen meat in this case) marinated then braised in Cahors PDO Red wine. It is similar in process to Boeuf bourgignon but with poultry. Carrots, onions, mushroom and aromatics come complete this slow braised dish. 100% French origin hen drumstick meat.
