Cassoulet is as old a dish as it gets; first mentions of it date back to the middle age, as far as 700 years ago. It is typically a very rich and hearty slow cooked dish that includes creamy white lingot beans, sausages, pork, duck as well as a savoury rich gravy sauce made, among others, of duck fat. This mixture of bits and pieces has been a staple of the south western culture for ages and is a “can’t miss” dish. Duck version comes with Toulouse sausage and duck wing confit, whereas the pork one comes with Toulouse sausage and pork shoulder. Serves 2 to 3 people. All duck and pork are of French origin 100%.
